4-hour Chashu Pork
Our Japanese braised pork belly’s (Pork Chashu's) melt-in-your-mouth texture and strong sweet-and-savory taste come from how it is cooked. It is slow-cooked for four hours after being rolled in our soy-sauce based marinating mixture. This process delivers the perfect fat versus meat ratio that you are sure to enjoy!

6-hour broth
It all starts at 6 a.m. when our chefs begin brewing the broth in anticipation of your order. A cacophony of pork bones, chicken bones, chicken feet, pork feet, tare sauce, mushrooms, cabbages, and green onions go into different pots creating our signature shio, miso, vegetable, and shoyu broths. Then we add fresh garnishes to really bring out the complex and aromatic flavors that you’ll find in your bowl, eight hours later. You heard that right, our chefs spend 6-8 hours before the store is open to meticulously prepare your broth!

24-hour Ajitsuke Tamago
What’s so great about Ni Ramen eggs? The short answer is its flavor and texture. Our soft-boiled eggs are marinated with both traditional and special seasonings resulting in the perfect balance of sweet and savory. We make our eggs a little sweet to cut through the fatty pork belly and rich pork bone soup. Additionally, we take from the Japanese practice of creamy yolks with a jam-like texture for a food experience like no other!
